This flour is made from a blend of garbanzo bean flour, white sorghum flour, tapioca flour, and fava bean flour, and contains absolutely no gluten. It's even produced in Bob's Red Mill's designated gluten-free facility, where their products undergo rigorous testing for cross-contamination, so you can feel good offering products made with this flour to customers with gluten sensitivities, Celiac disease, or wheat allergies. Its mild flavor is similar to that of "regular" all-purpose flours, making this blend a great substitute! All that's left for you to do is to add xanthan gum per the instructions on the packaging.
