Organic Pink Beans from Idaho

Resembling pinto and Great Northern beans, pink beans are cherished in Caribbean, Puerto Rican, and Mexican-American culinary traditions. They deepen in color upon cooking and are a popular choice for hearty chilis. To prepare, boil 10 cups of water, add 2 cups of beans, and let them boil for 2 to 3 minutes. After removing from heat, cover and let them sit for 1 to 4 hours. Drain, then place the beans in a large saucepan, covering them with water about an inch above the beans. Boil for 10 minutes, then simmer until tender, approximately 1 to 2 hours. Enhance the flavor by adding seasonings like garlic, onion, oregano, parsley, or thyme during cooking.
