As any baker knows, baking powder is absolutely indispensable in the kitchen—it’s what gives baked goods that spongy, airy texture we all love. Baking powder is a mix of baking soda (which is basic or alkaline), a weak acid, and a buffer, which prevents the baking soda and acid from reacting prematurely. When this acid-base reaction occurs during the baking process, gas bubbles form and cause the dough to rise. 

Most baking powders use cornstarch as their buffer. This can be a concern for many health-conscious shoppers, as cornstarch is often heavily processed. Azure Market baking powder, however, is made with certified non-GMO tapioca starch, so you can be confident no GMOs are sneaking into your baked goods!
